Mulligan Stew

Mulligan stew is a hearty American pot of beef, smoky sausage, and tender vegetables simmered until thick and comforting. Brown the beef and sausage first, then build flavor with onions, garlic, diced tomatoes, broth, Worcestershire, and thyme before simmering in stages.

Ingredients

beef chuck
  • 1.5 lb beef chuck, cut into 1-inch cubes
smoked sausage
  • 0.5 lb smoked sausage, sliced
seasonings
  • 1.5 tsp salt
  • 0.5 tsp black pepper
vegetable oil
  • 2 tbsp vegetable oil
aromatics
  • 1 onion, diced
  • 3 clove garlic, minced
stew base
  • 1 can (14.5 oz) diced tomatoes
  • 6 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
vegetables
  • 1 lb potatoes, cubed
  • 3 carrots, sliced
  • 2 cup cabbage, chopped
  • 1 cup corn kernels
beans
  • 1 can (15 oz) kidney beans, drained

Equipment

  • 1 Dutch oven

Method

Brown the meat
  1. Season the beef chuck cubes with salt and black pepper, then heat the vegetable oil in a Dutch oven over medium-high heat and brown the beef until browned on all sides, about 8 to 10 minutes. Add the sliced smoked sausage and cook until lightly browned, about 3 to 4 minutes; transfer beef and sausage to a set-aside plate.
Build the base
  1. In the same Dutch oven, cook the diced onion over medium heat for 4 minutes, stirring occasionally, until softened. Add the minced garlic and cook for 30 seconds, stirring just until fragrant; do not let it brown.
Simmer the stew
  1. Stir in diced tomatoes, beef broth, Worcestershire sauce, and dried thyme, then add the browned beef and sausage. Cover and simmer at a gentle bubble for 1 1/4 hours, stirring once or twice so nothing sticks to the bottom.
Cook the main vegetables
  1. Uncover and add cubed potatoes, sliced carrots, and chopped cabbage. Simmer at a gentle bubble for 30 minutes, stirring occasionally, until the potatoes are tender.
Finish and serve
  1. Stir in corn kernels and drained kidney beans, then simmer for 10 minutes more. Taste and season to your preference with additional salt and black pepper, then serve hot.

Notes

For best flavor, keep the simmer gentle once the pot is covered so the beef stays tender and the broth reduces slightly. Store leftovers in the refrigerator up to 4 days; freeze up to 3 months (thaw overnight in the fridge and reheat on the stove). For a lower-sodium option, use no-salt-added diced tomatoes and low-sodium beef broth while keeping the Worcestershire and thyme.
