  • 2 ripe mangoes peeled and finely diced

  • 1 jalapeño minced
  • 0.25 cup fresh cilantro chopped
  • 2 tbsp fresh lime juice

  • 0.06 tsp black pepper pinch

Method
 

Make the salsa
  1. Combine diced mango, red onion, minced jalapeño, and chopped cilantro in a medium bowl.
  2. Add fresh lime juice, salt, and black pepper, then stir gently to combine without crushing the mango chunks.
Rest and serve
  1. Let the salsa rest for at least 30 minutes in the refrigerator to allow flavors to meld.
  2. Stir again before serving and taste to adjust seasonings if needed.
  3. Store in an airtight container in the refrigerator for up to two days.

Pro tip: dice the mango uniformly for even texture, and keep stirring gentle so the chunks stay intact. Refrigerate in an airtight container up to 2 days; freeze is not recommended because the mango can become watery. For a lighter option, reduce the jalapeño to 1/2 for a milder salsa without changing the core fruit-lime flavor.
