Ingredients
  

Enchilada filling
  • 3 cooked chicken, shredded Use shredded, cooked chicken (rotisserie works).
  • 8 oz cream cheese, softened Soften to mix smoothly.
  • 0.5 cup pickled jalapeños Plus more for topping.
  • 0.5 cup sharp cheddar, shredded Reserve remaining cheddar for topping.
Enchiladas
  • 8 flour tortillas Use for rolling and baking.
White sauce
  • 3 tbsp butter
  • 3 tbsp flour
  • 2 cup chicken broth
  • 1 cup sour cream
  • 0.5 tsp garlic powder
  • 0.5 cup Monterey jack cheese, shredded
  • salt To taste.
  • 0.5 cup sharp cheddar, shredded Remaining cheddar for topping.

Method
 

Prep and assemble
  1. Preheat oven to 375°F and grease a 9x13 baking dish. Set up your station so the tortillas can be filled and rolled quickly.
  2. Mix shredded chicken, cream cheese, pickled jalapeños, and 1/2 cup cheddar until combined. Divide the mixture among the tortillas, roll them up, and place seam-side down in the baking dish.
Make the white sauce
  1. In a pot, melt butter and whisk in flour, cooking 1 minute. This cooks out the raw flour taste and thickens the base.
  2. Gradually add chicken broth while whisking until the sauce thickens. Remove from heat so the sauce stays smooth.
  3. Stir in sour cream, garlic powder, salt, and Monterey jack until melted and creamy. Taste and adjust salt if needed.
Bake and serve
  1. Pour the white sauce over the enchiladas, then top with the remaining cheddar. Scatter jalapeño rounds on top for the signature look.
  2. Bake 25–30 minutes until bubbly and golden. Let it cool 5 minutes so the filling sets slightly before serving.
  3. Serve immediately. Slice and serve warm to keep the cheese filling creamy.

Notes

Pro tip: Soften the cream cheese before mixing so you don’t get lumps in the tortilla rolls. Store leftovers in the fridge up to 3 days in a sealed container; reheat covered in a 325°F oven until warm. Freezing is not recommended because the creamy white sauce can break after thawing. For a lighter option, use reduced-fat cream cheese and sour cream (texture remains creamy, flavor slightly less rich).
