Cook the turkey
- Heat the olive oil in a large skillet over medium-high heat, then add the lean ground turkey and cook until no longer pink, breaking it into crumbles with the back of a spatula.
- Add the garlic and grated fresh ginger and cook for 1 minute until fragrant.
Make it sticky
- Whisk together honey, soy sauce, rice vinegar, sesame oil, and red pepper flakes, then pour the mixture over the turkey.
- Stir in the cornstarch slurry and cook for 2–3 minutes, until the sauce thickens and coats the turkey.
Serve
- Serve the honey garlic turkey over cooked rice and garnish with sesame seeds and sliced green onions.
Notes
For best browning, keep the turkey in a single layer for the first few minutes before breaking into crumbles. Store leftovers in an airtight container in the refrigerator for up to 4 days; reheat gently in a skillet with a splash of water to loosen the sauce. Freeze the turkey mixture (sauce included) for up to 2 months, then thaw overnight in the fridge and reheat. For a lighter swap, use low-sodium soy sauce and reduce the red pepper flakes to taste.
