  • 1 smoked paprika Use to season to taste.
Searing fat
  • 2 tbsp olive oil For searing the chicken.
Honey butter sauce
  • 6 tbsp butter Melt to form the base of the glossy sauce.
  • 3 cloves garlic, minced Add after butter melts.
  • 0.3333333333 cup honey Creates the sweet caramelized glaze.
  • 1 tbsp soy sauce Adds savory depth to the honey butter sauce.
  • 1 tbsp apple cider vinegar Brightens and balances sweetness.
Garnish
  • 1 Fresh thyme Scatter on top for aroma.
  • 1 flaky sea salt Finish with a light pinch for pop.

Equipment

  • 1 cast iron skillet

Method

Sear the chicken
  1. Season boneless skinless chicken breasts with salt, pepper, garlic powder, and smoked paprika to taste. Heat olive oil in a large skillet over medium-high heat and sear until deep golden, 5-6 minutes per side, until the chicken reaches an internal temperature of 165°F, then remove.
Make the honey butter sauce
  1. Melt butter in the same pan over medium heat. Add minced garlic and cook for 1 minute until fragrant and lightly golden.
  2. Stir in honey, soy sauce, and apple cider vinegar, then bring the mixture to a simmer. Let it simmer briefly so the flavors meld and the sauce starts to look glossy.
Glaze and finish
  1. Return the chicken to the pan and cook for 2-3 minutes, turning and basting as the sauce reduces. Cook until the honey butter sauce caramelizes and coats the chicken in a shiny amber layer.
  2. Plate the chicken and drizzle with any remaining sauce. Finish with fresh thyme leaves and flaky sea salt.

Notes

For maximum browning, pat the chicken dry and avoid moving it during the first sear. Refrigerate leftovers in an airtight container for up to 3 days; rewarm gently in a skillet over low heat. Freezing is not recommended because the honey-butter sauce can separate slightly. If you want a lighter version, use olive-oil cooking and reduce butter to 4 tbsp while increasing honey by 1 tbsp to keep the glaze coating well.
