Ingredients
  

Carrots and seasoning
  • 2 lb whole carrots, peeled
  • 3 tbsp olive oil
  • 0.25 salt and pepper to taste
Honey brown sugar glaze
  • 0.25 cup honey
  • 2 tbsp brown sugar
  • 2 tbsp butter, melted
  • 1 tsp cinnamon
Garnish
  • 0.5 fresh thyme for garnish

Method
 

Prep the carrots
  1. Toss the whole carrots with olive oil, salt, and pepper until well coated, so every piece has an even sheen.
Grill until tender and charred
  1. Grill the carrots over medium heat for 15-20 minutes, turning occasionally, until tender and charred with browned edges.
Warm the honey-brown sugar glaze
  1. In a small saucepan, combine honey, brown sugar, melted butter, and cinnamon and warm until combined into a smooth, pourable glaze.
Glaze and serve
  1. Remove the carrots from the grill and immediately toss them with the honey-brown sugar glaze so it clings while the carrots are hot.
Garnish
  1. Garnish with fresh thyme and serve warm, letting the glaze drip slightly for a glossy finish.

Notes

For the best char marks, keep the grill at steady medium heat and turn the carrots only occasionally so they can develop browned spots. Store leftovers covered in the refrigerator up to 3 days and reheat gently on a skillet or in the oven until hot; freezing isn’t recommended because the glaze can separate. Dietary swap: use vegan butter if you want a dairy-free glaze.
