Double-crunch coating
- Mix the flour with garlic powder, onion powder, smoked paprika, salt, and pepper. Dredge the chicken in the seasoned flour, dip in beaten eggs, then dredge in flour again for the double-crunch coat.
Pan-fry until extra crispy
- Heat 1/2 inch of vegetable oil in a large cast iron skillet over medium-high heat to 350°F. Pan-fry the chicken for 5-6 minutes per side until golden and crunchy, with the internal temperature reaching 165°F.
- Drain the fried chicken briefly so excess oil doesn’t soften the crust. Keep the chicken hot and crisp while you make the sauce.
Make honey garlic sauce and serve
- Simmer honey, garlic, soy sauce, butter, and apple cider vinegar in a saucepan over medium heat for 3-4 minutes until slightly thickened. Watch for a glossy sheen as it coats the back of a spoon.
- Pour the honey garlic sauce over the hot crispy chicken. Serve immediately over rice so the crunchy coating stays crisp.
- Garnish with sesame seeds and sliced green onions. Add them right before serving for fresh color and aroma.
Notes
Pro tip: pound the chicken breasts to a uniform thickness so both sides cook evenly and stay juicy when double-dipped. Refrigerate leftovers in an airtight container up to 3 days; reheat in a hot oven or air-fryer to restore crunch (microwave will soften). Freezing is not recommended for best texture. For a lighter swap, use egg whites plus a small amount of oil in the sauce, while keeping the double flour coating method for crispness.
