Ingredients
  

For apple filling
  • 6 apples large, peeled and sliced
  • 0.25 cup granulated sugar
  • 2 tbsp brown sugar
  • 2 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tbsp lemon juice
For oat topping
  • 1.5 cup rolled oats
  • 1 cup all-purpose flour
  • 0.75 cup brown sugar packed
  • 1 tsp cinnamon
  • 0.25 tsp salt
  • 0.5 cup unsalted butter melted
  • 1 vanilla ice cream for serving

Method
 

Cook the apple filling
  1. Toss the sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice, then place them in the slow cooker.
  2. Lay a double layer of paper towels under the lid to absorb excess moisture.
Make and add the oat topping
  1. Combine rolled oats, all-purpose flour, packed brown sugar, cinnamon, and salt in a bowl.
  2. Drizzle the melted unsalted butter into the oat mixture and stir until it forms clumps.
  3. Scatter the oat topping over the apples in the slow cooker, and do not stir.
Slow cook
  1. Cook on Low for 2.5-3 hours, until the apples are tender and the topping is set.
Optional crisp boost and serve
  1. Transfer the crisp to an oven-safe dish for a crispier topping, then broil for 3-4 minutes.
  2. Serve warm with vanilla ice cream.

Notes

For best results, keep the lid closed during the 2.5-3 hour cook so the topping can set undisturbed. Refrigerate leftovers in a covered container up to 4 days; reheat individual portions in the microwave or a 300°F (150°C) oven until warmed through. Freezing is not recommended because the oat topping softens after thawing. For a lighter swap, use unsalted butter and replace up to half the granulated sugar with a 1:1 sugar alternative if you prefer.
