  • 1 can (3.4 oz) instant vanilla pudding mix dry, not prepared
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 0.5 tsp salt
Wet ingredients
  • 1 can (15 oz) pumpkin puree
  • 0.75 cup granulated sugar
  • 0.5 cup brown sugar
  • 0.5 cup vegetable oil
  • 3 eggs
  • 1 tsp vanilla extract
  • 0.25 cup sour cream
Powdered sugar glaze for serving
  • 1 cup powdered sugar
  • 2 tbsp milk

Method
 

Prep and preheat
  1. Preheat the oven to 350F and grease a 9x5 loaf pan.
Mix the dry ingredients
  1. Whisk the all-purpose flour, instant vanilla pudding mix (dry, not prepared), baking soda, pumpkin pie spice, cinnamon, and salt until evenly combined.
Mix the wet ingredients
  1. Whisk the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, vanilla extract, and sour cream until smooth.
Combine and bake
  1. Fold the dry ingredients into the wet ingredients just until combined, then pour the batter into the prepared loaf pan.
  2. Bake for 60-65 minutes at 350F, until a toothpick inserted in the center comes out clean, and cool completely before glazing.
Glaze and serve
  1. Drizzle the powdered sugar glaze over the cooled loaf to finish.

Notes

For the moist, tender crumb, avoid overmixing once the dry ingredients are added—fold just until you no longer see dry streaks. Store leftovers covered in the refrigerator for up to 4 days; freeze sliced portions for up to 2 months (thaw overnight in the fridge). For a lighter option, you can use low-fat sour cream and swap vegetable oil with an equal amount of neutral oil without changing bake time.
