Brown and build the soup
- Brown the ground beef in a large pot over medium-high heat, then drain the fat.
- Sauté the onion for 3 minutes, then add the garlic and cook for 1 minute.
- Add the black beans, corn, Rotel tomatoes, diced tomatoes, taco seasoning, ranch dressing mix, broth, and cumin, then stir to combine.
- Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes.
- Season with salt and a squeeze of lime juice.
Serve with toppings
- Serve the taco soup with a squeeze of lime, sour cream, shredded cheddar, tortilla chips, cilantro, and avocado.
Notes
Pro tip: simmer uncovered for the last 5 minutes to thicken the broth slightly. Store leftovers in the refrigerator up to 4 days; reheat gently on the stovetop. Freezing is OK for up to 2 months—thaw and reheat, then refresh with a little lime juice. For a lighter option, use ground turkey and low-sodium broth/taco seasoning if desired.
