Bake the crust
- Preheat the oven to 325F. Line a 9x13 pan, press crumbs mixed with sugar and melted butter firmly into the bottom, and bake for 8 minutes.
Make the cheesecake layers
- Beat the softened cream cheese with sugar until smooth, then beat in eggs, sour cream, and vanilla until fully blended; set aside. Keep the mixture smooth and lump-free for a clean swirl.
- Beat the softened cream cheese with pumpkin puree and brown sugar until smooth, then beat in egg, pumpkin pie spice, cinnamon, and vanilla until fully blended; set aside. The pumpkin layer should look glossy and thick, not grainy.
Assemble and swirl
- Pour the vanilla cheesecake layer over the baked crust and spread gently. Make an even layer so the swirl spreads across the whole surface.
- Dollop the pumpkin mixture in large spoonfuls over the vanilla layer. Scatter the dollops across the pan rather than clustering in one area.
- Use a knife to swirl dramatically through the dollops into the vanilla layer, making clear ribbons. Stop once you get a bold pattern; over-swirling can muddy the color.
Bake, cool, and chill
- Bake at 325F for 32-35 minutes until the center is just set. Look for a slight jiggle in the middle with no wet batter on top.
- Cool the bars at room temperature, then refrigerate for 3 hours before cutting into bars. Chill until firm so the slices hold their swirl pattern.
Notes
For the cleanest slices, chill the bars until fully firm, then wipe the knife between cuts. Store covered in the refrigerator up to 5 days; freeze bars up to 2 months (thaw overnight in the fridge). For a dairy-light swap, use reduced-fat cream cheese and sour cream; the swirl will still set, but the texture may be slightly softer.
