Simmer the spiced cider
- In a Dutch oven, simmer apple cider, cinnamon sticks, star anise, whole cloves, and brown sugar for 10 minutes, keeping it at a gentle simmer with visible bubbles around the edges.
- Taste carefully after simmering and ensure the spices look evenly dispersed in the cider, then move to straining.
Chill
- Strain the spiced cider through a fine strainer and chill completely until cold, with the mixture visibly clearer and free of spice solids.
Rim and build the flutes
- Rim each chilled prosecco flute with cinnamon sugar so the edge shows an even dusting and no bare glass spots.
- Pour 2 tablespoons of spiced cider into each flute, so you can see a light spiced layer at the bottom.
- Top with prosecco and garnish with a thin apple slice before serving, with the drink turning bubbly and golden as it fills the glass.
Notes
Pro tip: chill the spiced cider fully so it doesn’t dull the prosecco’s bubbles. Store the strained spiced cider covered in the refrigerator up to 3 days (freeze up to 1 month if you want to prep ahead); assemble right before serving. For a lighter option, use a no-sugar-added apple cider (and reduce brown sugar slightly) while keeping the same spice amounts for the same flavor profile.
