Ingredients

baby carrots
  • 2 lb baby carrots
brown sugar, packed
  • 0.5 cup brown sugar, packed
maple syrup
  • 0.25 cup maple syrup
butter, melted
  • 0.25 cup butter, melted
ground cinnamon
  • 0.5 tsp ground cinnamon
salt
  • 0.5 tsp salt
black pepper
  • 0.25 tsp black pepper
fresh parsley, chopped
  • 1 tbsp fresh parsley, chopped

Equipment

  • 1 slow cooker

Method

Glaze and cook
  1. Add baby carrots to the slow cooker and spread into an even layer, visible carrot tops facing up for even coating.
  2. Whisk brown sugar, maple syrup, melted butter, ground cinnamon, salt, and black pepper until smooth, then pour the glaze over the carrots and toss to coat.
  3. Cover and cook on LOW for 4-5 hours, until carrots are fork-tender, with bubbling glaze around the edges and a glossy sheen.
  4. If cooking on HIGH, cover and cook for 2-3 hours, until carrots are fork-tender, with syrupy glaze thickening and clinging to the carrots.
  5. Stir well to re-coat the carrots in the glaze so the syrup coats every piece and looks uniform and shiny.
Serve
  1. Garnish with fresh parsley and serve warm, with bright green flecks on top and glossy caramelized glaze visible.

Notes

For the most even coating, toss the carrots with the glaze right after pouring it in, then avoid stirring until halfway through cooking if possible. Store leftovers in an airtight container in the refrigerator for up to 4 days; reheat gently in the microwave or on the stovetop with a splash of water. Freezing is not recommended because the carrots can soften and the glaze may separate after thawing. If you want a lighter option, swap half the butter for a low-sugar or plant-based spread with a similar fat content to keep the glaze smooth.
