Searing and sauce base
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 8 oz cremini mushrooms sliced
  • 4 garlic cloves minced
  • 0.5 cup dry red wine or white wine
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 1 tsp Dijon mustard
  • 1 tbsp fresh thyme leaves
  • 1 fresh thyme sprigs for garnish

Method
 

Sear the chicken
  1. Season chicken generously with salt, pepper, garlic powder, and dried thyme. Heat olive oil in a large skillet over medium-high heat, then sear chicken for 5-6 minutes per side until golden and cooked through to 165°F, using a visible browning cue at the edges; remove to a plate.
Brown the mushrooms and build the sauce
  1. Melt butter in the same pan, then cook sliced cremini mushrooms over medium-high heat for 5-6 minutes until deeply golden. Add minced garlic and cook for 1 minute until fragrant, with the garlic lightly sizzling.
  2. Pour in dry red wine, scraping up all browned bits from the pan. Simmer for 3 minutes until reduced slightly, watching the liquid turn darker and more syrupy.
  3. Add chicken broth, heavy cream, Dijon mustard, and fresh thyme leaves, stirring to combine. Simmer for 5-6 minutes until the sauce thickens enough to coat the back of a spoon, with thyme flecks visible throughout.
Finish and serve
  1. Return chicken to the pan and spoon the mushroom wine sauce over each breast. Garnish with fresh thyme sprigs and serve, ensuring each chicken breast is surrounded by dark glossy sauce.

Notes

Pro tip: use a wide, heavy skillet so you get deep browning on the chicken and mushrooms without steaming. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently in a skillet over low heat until warmed through. Freezing isn’t recommended because the creamy sauce can separate. For a lighter option, swap heavy cream with half-and-half, simmering 1-2 extra minutes to thicken.
