Bake the pumpkin bars

For the smoothest frosting, cool the brown-sugar mixture exactly 15 minutes before beating—warm mixture can turn grainy. Store bars covered in the refrigerator up to 5 days; freeze frosted bars up to 2 months (wrap tightly). For a lighter option, use low-fat cream and reduce powdered sugar slightly to keep the frosting thick enough to spread.
