Herb cheese filling
  • 0.5 cup Boursin or garlic herb cheese Softened
Parmesan
  • 0.25 cup grated Parmesan
Egg wash
  • 1 egg Beaten with 1 tablespoon water
Water
  • 1 tbsp water Mixed with egg for egg wash

Black pepper
  • 0.25 tsp black pepper To taste
Flaky sea salt
  • 1 pinch flaky sea salt For finishing

Equipment

  • 1 sheet pan

Method

Prep and portion
  1. Preheat the oven to 400F and line a baking sheet with parchment paper.
  2. Roll the puff pastry into a 10x12-inch rectangle, then cut it into 12 strips about 1 inch wide.
Fill and wrap
  1. Spread a thin layer of herb cheese on each pastry strip, then sprinkle with Parmesan and black pepper.
  2. Wrap each asparagus spear in a half slice of prosciutto.
  3. Wind a pastry strip in a spiral around each wrapped spear, keeping the cheese side in, then place the bundles on the baking sheet.
Bake and finish
  1. Brush the pastry with egg wash.
  2. Bake 16-18 minutes, until the bundles puff up and turn deep golden brown.
  3. Finish with lemon zest and flaky sea salt, then serve warm.

Notes

For the cleanest spirals, keep the pastry strips fairly even in width so each bundle bakes at the same rate. Store leftovers covered in the fridge for up to 2 days and rewarm in a 350F oven for 5-7 minutes to re-crisp; freeze assembled, unbaked bundles up to 1 month and bake from frozen at 400F for 18-22 minutes (add a couple minutes if needed). For a dairy-lite option, swap the Boursin/garlic herb cheese for a lactose-free herb cheese and use a reduced-fat Parmesan or skip it for a lighter filling.
