Ingredients

Skewers and vegetables
  • 1.5 lb pork tenderloin Cut into 1.5-inch cubes.
  • 2 cup fresh pineapple chunks
  • 1 red onion Cut into chunks.
  • 1 green bell pepper Cut into chunks.
For BBQ marinade
  • 0.5 cup BBQ sauce
  • 2 tbsp soy sauce
  • 2 tbsp pineapple juice
  • 1 tbsp honey
  • 2 garlic cloves Minced.
  • 1 tsp smoked paprika

Equipment

  • 1 grill
  • 1 skewers

Method

Make and marinate the pork
  1. Whisk BBQ sauce, soy sauce, pineapple juice, honey, minced garlic, and smoked paprika until combined, then toss with the pork cubes so they’re fully coated.
  2. Marinate the pork for at least 30 minutes.
Prep the skewers
  1. Soak wooden skewers in water for 30 minutes so they don’t burn on the grill.
  2. Thread pork, pineapple, red onion, and bell pepper alternately onto the skewers.
Grill and finish
  1. Preheat the grill to medium-high.
  2. Grill the skewers for 4–5 minutes per side, brushing with extra BBQ marinade, until the pork is cooked and the edges are charred.
  3. Let the skewers rest for 3 minutes before serving with extra BBQ sauce on the side.

Notes

Pro tip: reserve a few tablespoons of marinade/extra BBQ sauce before brushing so you can serve it alongside. Refrigerate leftovers in a sealed container for up to 3 days; freeze the cooked skewers up to 2 months (best reheated gently so pineapple stays tender). For a lighter option, use low-sugar BBQ sauce and swap honey for a small drizzle of pineapple juice or a sugar-free sweetener.
