Ingredients

Goat cheese log
  • 10 oz goat cheese log, chilled Use a log style so it slices cleanly.
Cream cheese
  • 4 oz cream cheese, softened Softened helps it beat smooth.
Bacon coating
  • 6 slices bacon, cooked crisp and finely chopped Make sure it’s very crisp before chopping.
Toasted nuts
  • 1 3/4 cup pecans, toasted and finely chopped Toast until fragrant for better crunch.
Cranberries
  • 1 1/4 cup dried cranberries, chopped Chop so they distribute evenly.
Herb
  • 1 tbsp fresh chives, chopped Optional but adds fresh color and flavor.
Honey finish
  • 2 tbsp hot honey or regular honey Drizzle right before serving.
Serving
  • 1 Crackers for serving Choose sturdy crackers for easy dipping.

Method

Blend and shape the log
  1. Beat goat cheese and cream cheese until smooth, then shape into a log.
  2. Wrap the log in plastic wrap and chill for 30 minutes until firm, so it holds its shape when coated.
Coat and assemble
  1. Combine bacon, pecans, cranberries, and chives on a plate so you can roll the log in one pass.
  2. Roll the chilled log in the mixture, pressing to coat on all sides for full coverage.
  3. Transfer to a serving board and drizzle with honey to finish.
  4. Serve with crackers for dipping and easy snacking.

Notes

For the cleanest slice, keep the log well-chilled before rolling, and press firmly while coating so the bacon-pecan layer adheres. Refrigerate covered up to 3 days; freeze is not recommended because the texture can soften after thawing. Dietary swap: use a vegetarian “bacon” (smoked tempeh or coconut bacon) that’s crisped well, then chop and proceed the same way.
