  • 4 oz cream cheese Softened
milk
  • 2 tbsp milk
apricot preserves
  • 0.33 cup apricot preserves
honey
  • 2 tbsp honey
dried apricots
  • 0.25 cup dried apricots, finely chopped Finely chopped
pistachios
  • 2 tbsp pistachios, chopped Chopped
fresh thyme leaves
  • 1 tsp fresh thyme leaves
flaky sea salt
  • 0.05 flaky sea salt Pinch
crackers or crostini
  • 1 crackers or crostini For serving

Equipment

  • 1 stand mixer

Method

Make the goat cheese base
  1. Beat goat cheese, cream cheese, and milk until light and smooth, scraping the bowl as needed so no lumps remain; the texture should look creamy and spreadable.
Form the swirl
  1. Spread the mixture into a shallow serving bowl and make a swirl in the center using the back of a spoon so the center is slightly lower for toppings.
Warm the apricot honey
  1. Warm apricot preserves with honey in a microwave for 20-30 seconds, stirring until loose and pourable; stop once it loosens but isn’t hot enough to be runny.
Assemble and finish
  1. Spoon the warm apricot honey over the goat cheese swirl so it pools lightly in the center and trails outward.
Top and serve
  1. Top with dried apricots, pistachios, thyme leaves, and flaky sea salt, then serve immediately with crackers or crostini around the bowl.

Notes

For the smoothest spread, make sure the goat cheese and cream cheese are fully softened before mixing; if needed, microwave each 10-15 seconds just to soften. Store covered in the fridge up to 3 days; add the nuts and salt right before serving for the best texture. Freezing is not recommended as the cheeses can become grainy after thawing. If you want a dairy-light option, use lactose-free cream cheese and goat cheese to keep the same flavor profile.
