Ingredients

Chicken breasts
  • 1.5 lb chicken breasts (boneless skinless, added raw)
Canned vegetables and tomatoes
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) Rotel tomatoes
  • 1 can (14 oz) diced tomatoes
Seasonings and broth
  • 1 packet (1 oz) taco seasoning
  • 1 packet (1 oz) ranch dressing mix
  • 4 cup chicken broth
Creamy finish
  • 8 oz cream cheese, cubed
  • 0.5 cup heavy cream (added at end)
Toppings
  • 0.5 cup shredded cheddar
  • 0.25 cup sour cream
  • 1 cup tortilla chips
  • 2 jalapeños
  • 2 tbsp cilantro

Equipment

  • 1 Dutch oven

Method

Load the slow cooker
  1. Add the raw chicken breasts, black beans, corn, Rotel tomatoes, diced tomatoes, taco seasoning, ranch dressing mix, chicken broth, and cream cheese cubes to the crockpot. Stir everything except the chicken so the cream cheese starts to disperse through the broth.
Slow-cook until the chicken shreds easily
  1. Cook on Low for 6-8 hours or on High for 3-4 hours, until the chicken is fully cooked and tender. The soup should be gently bubbling with thickened texture and visible tomato/bean/corn throughout.
Shred and finish the creaminess
  1. Remove the chicken, shred it with two forks, and return the shredded chicken to the soup. Stir to distribute evenly so every spoonful includes chicken.
  2. Stir until the cream cheese is completely melted and incorporated, then stir in the heavy cream. Watch for the broth to turn smooth and cream-swirl glossy.
Season and serve
  1. Season with salt and pepper to taste. Serve hot with shredded cheddar, sour cream, tortilla chips, jalapeños, and cilantro on top.

Notes

For best texture, shred the chicken while it’s hot so it falls apart easily, then stir thoroughly before adding heavy cream. Refrigerate leftovers in a sealed container up to 4 days; the soup also freezes well up to 3 months (for best results, thaw overnight in the fridge and reheat gently). For a lighter option, use reduced-fat cream cheese and half-and-half instead of heavy cream while keeping the same method.
