Sear the chicken
- Season the chicken thighs with salt, pepper, garlic powder, and 1 teaspoon smoked paprika. Heat the vegetable oil in a cast iron skillet over medium-high heat and sear the chicken skin-side down for 6-7 minutes until deeply golden, then flip and sear for 4 minutes until browned; remove to a plate.
Build the paprika sauce
- In the same pan, cook the diced onion over medium heat for 5-6 minutes until softened. Add the minced garlic, sweet Hungarian paprika, and smoked paprika and cook for 1 minute until fragrant.
- Add the crushed tomatoes and chicken broth, then bring to a simmer. Return the chicken skin-side up to the sauce.
Simmer until tender
- Cover the pan and simmer at a steady simmer for 18-20 minutes, until the chicken reaches an internal temperature of 165°F. Remove from heat and stir in the sour cream until the sauce is smooth and creamy.
Serve
- Serve the creamy paprika chicken over cooked white rice and garnish with fresh dill.

Pro tip: stir in the sour cream off the heat and keep the sauce at a gentle temperature so it stays silky without splitting. Refrigerate leftovers in an airtight container up to 3 days; reheat gently on the stovetop. Freezing is not recommended for best cream texture. If you want a lighter option, use low-fat sour cream and follow the same off-heat addition to keep the sauce smooth.
