Cook the chicken
- In a Dutch oven, simmer the chicken breast or thighs in the chicken broth with the taco seasoning for 18-20 minutes, until cooked through. Visual cue: the chicken should no longer look pink in the center.
- Remove the chicken from the pot, shred it, and set it aside while you keep the broth warm. Visual cue: the broth remains steady and steaming, ready for the next add-ins.
- Return the seasoned broth to the pot. Visual cue: the surface starts to look lightly glossy from the broth before simmering ingredients.
Build the soup
- Add the diced onion, minced garlic, ranch dressing mix, and all canned ingredients (black beans, corn, Rotel tomatoes, and diced tomatoes) to the broth. Stir until evenly combined.
- Bring the mixture to a boil, then simmer for 10 minutes. Visual cue: bubbles should slow down to a gentle simmer across the surface.
Finish and serve
- Stir the shredded chicken back into the pot. Return to a light simmer just long enough to warm through.
- If using cream cheese, add the cubed cream cheese and cook until melted. Visual cue: the broth turns thicker and smoother.
- Season with salt and black pepper, then serve immediately with shredded cheddar, sour cream, tortilla chips, lime wedges, and cilantro. Visual cue: toppings sit on top and don’t fully sink in.
Notes
For the best texture, keep the soup at a gentle simmer once you add the chicken so it stays tender instead of shredding into stringy bits. Store in an airtight container in the refrigerator up to 3-4 days; freeze yes for up to 2-3 months (leave out cream cheese until reheating if possible). Dietary swap: use low-sodium chicken broth and low-sodium taco seasoning to reduce sodium without changing the method.
