Ingredients

Chicken
  • 1.5 lb chicken breast or thighs
  • 0.25 salt
  • 0.25 black pepper
Soup base
  • 1 onion, diced
  • 3 clove garlic, minced
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) Rotel tomatoes
  • 1 can (14 oz) diced tomatoes
  • 1 packet (1 oz) taco seasoning
  • 1 packet (1 oz) ranch dressing mix
  • 4 cup chicken broth
  • 0.25 lb cream cheese, cubed (optional for creaminess)
Toppings
  • 4 oz shredded cheddar
  • 0.25 cup sour cream
  • 1 cup tortilla chips
  • 1 lime wedges
  • 0.25 cup cilantro

Equipment

  • 1 Dutch oven

Method

Cook the chicken
  1. In a Dutch oven, simmer the chicken breast or thighs in the chicken broth with the taco seasoning for 18-20 minutes, until cooked through. Visual cue: the chicken should no longer look pink in the center.
  2. Remove the chicken from the pot, shred it, and set it aside while you keep the broth warm. Visual cue: the broth remains steady and steaming, ready for the next add-ins.
  3. Return the seasoned broth to the pot. Visual cue: the surface starts to look lightly glossy from the broth before simmering ingredients.
Build the soup
  1. Add the diced onion, minced garlic, ranch dressing mix, and all canned ingredients (black beans, corn, Rotel tomatoes, and diced tomatoes) to the broth. Stir until evenly combined.
  2. Bring the mixture to a boil, then simmer for 10 minutes. Visual cue: bubbles should slow down to a gentle simmer across the surface.
Finish and serve
  1. Stir the shredded chicken back into the pot. Return to a light simmer just long enough to warm through.
  2. If using cream cheese, add the cubed cream cheese and cook until melted. Visual cue: the broth turns thicker and smoother.
  3. Season with salt and black pepper, then serve immediately with shredded cheddar, sour cream, tortilla chips, lime wedges, and cilantro. Visual cue: toppings sit on top and don’t fully sink in.

Notes

For the best texture, keep the soup at a gentle simmer once you add the chicken so it stays tender instead of shredding into stringy bits. Store in an airtight container in the refrigerator up to 3-4 days; freeze yes for up to 2-3 months (leave out cream cheese until reheating if possible). Dietary swap: use low-sodium chicken broth and low-sodium taco seasoning to reduce sodium without changing the method.
