Simmer and shred the chicken
- Add chicken breast, 4 cups chicken broth, and taco seasoning to a Dutch oven; simmer at a gentle boil for 18-20 minutes, until the chicken is cooked through. Remove the chicken, shred it, and reserve the broth in the pot.
Build the taco soup
- Return the seasoned broth to the pot and add corn, black beans, Rotel tomatoes, diced tomatoes, ranch dressing mix, and cumin. Stir until evenly combined and simmer to heat through.
- Return the shredded chicken to the pot, bring the soup to a boil, then simmer for 10 minutes. Keep it bubbling gently so the flavors meld.
Finish and serve
- Stir in heavy cream if using and simmer for 3 more minutes. Watch for the broth to turn slightly creamier and cohesive.
- Season to taste with salt and add a squeeze of lime. Serve hot with sour cream, shredded cheddar, tortilla chips, lime wedges, cilantro, and avocado.
Notes
Pro tip: for the best texture, shred the chicken while it’s warm and keep the soup at a gentle simmer after adding the tomatoes so it thickens slightly without boiling away moisture. Refrigerate leftovers in an airtight container for up to 4 days; freeze up to 3 months (do not add sour cream/cheddar until reheating for best results). For a lighter option, replace heavy cream with an equal amount of evaporated milk or omit it for a brothier soup.
