  • 1 cup shredded mozzarella cheese
  • 0.5 cup Parmesan cheese, grated

  • 1 tbsp extra garlic butter for drizzling

Method
 

Make the mushroom cheese filling
  1. Cook the mushrooms in butter over medium-high heat for 5-6 minutes, stirring, until all moisture has evaporated and the pan looks drier.
  2. Add the minced garlic and fresh thyme leaves, then cook for 1 minute until fragrant and glossy.
  3. Cool the mushroom mixture slightly so it won’t melt the cheese too fast, then stir in the shredded mozzarella and grated Parmesan until evenly combined and melty.
Stuff and secure the chicken
  1. Cut a deep pocket in each chicken breast, then season inside and out with salt, pepper, garlic powder, and smoked paprika.
  2. Fill each pocket with the mushroom-cheese mixture and secure the opening with toothpicks so the filling stays inside.
Sear and bake
  1. Heat olive oil in an oven-safe skillet over medium-high heat, then sear the chicken for 3-4 minutes per side until deeply golden.
  2. Bake at 400°F for 18-22 minutes until the internal temperature reaches 165°F and the juices run clear when pierced.
Finish and serve
  1. Remove the toothpicks, drizzle with extra garlic butter, and rest the chicken for 5 minutes so the molten filling settles slightly before slicing.

Pro tip: Cook the mushrooms until the pan is dry before adding garlic and thyme—this prevents watery filling from leaking out during baking. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently in a 350°F oven until warmed through. Freezing is not recommended because the cheese filling can change texture when thawed. For a lower-fat swap, use part-skim mozzarella and reduced-fat Parmesan in the filling.
