eggs
  • 2 large eggs

  • 0.5 cup milk

  • 0.5 tsp salt
all-purpose flour
  • 0.5 cup all-purpose flour
pecans
  • 0.75 cup pecans Chopped.

Equipment

  • 1 sheet pan

Method

Cook and mash the squash
  1. Boil cubed butternut squash for 15 minutes until very tender, then drain well so the filling won’t turn watery.
  2. Preheat the oven to 350F and grease a 9x13-inch baking dish.
  3. Mash the hot squash with 1/4 cup melted butter, 1/4 cup brown sugar, eggs, milk, vanilla extract, ground cinnamon, and salt until smooth.
  4. Spread the smooth squash mixture evenly into the greased 9x13-inch baking dish.
Make the pecan topping and bake
  1. Mix all-purpose flour, chopped pecans, remaining butter, and remaining brown sugar until you get a crumbly topping.
  2. Sprinkle the crumb topping over the squash in an even layer.
  3. Bake at 350F for 35-40 minutes, until the topping is golden and the edges bubble.

Notes

For the creamiest texture, mash the squash while it’s still hot and drain it thoroughly after boiling. Refrigerate leftovers in an airtight container for up to 4 days; reheat in the oven at 300F until warmed through. Freezing is not recommended because the topping can soften after thawing. For a lighter option, use reduced-fat milk and swap in half the butter for olive oil or a plant-based butter while keeping the same oven time.
