Prep
- Preheat the oven to 375°F and line a baking sheet with foil for easier cleanup.
Make the buffalo chicken
- Mix the shredded chicken with the buffalo hot sauce until evenly coated.
Assemble the bombs
- Flatten each biscuit into a 4-inch circle.
- Place a scoop of buffalo chicken and one mozzarella cube in the center of each biscuit.
- Pull the edges up and over the filling and pinch tightly to seal.
- Wrap each sealed ball with a strip of bacon and secure with a toothpick.
- Stir the melted butter with the garlic powder, then brush each bomb with garlic butter.
Bake and serve
- Bake at 375°F for 22–25 minutes, until the bacon is crispy and the biscuit is golden.
- Serve the buffalo chicken bacon mozzarella bombs with ranch or blue cheese dressing for dipping.
Notes
For the crispiest bacon, keep the toothpicks in place and don’t overcrowd the sheet pan. Store leftovers in the fridge up to 3 days in a sealed container; reheat in a 350°F oven until warmed through. Freezing: you can freeze unbaked assembled bombs, then bake from frozen at 375°F with extra time until hot in the center. For a lighter option, use reduced-fat mozzarella and turkey bacon while keeping the same assembly and bake time.
