Prep and assemble
- Preheat oven to 425°F and place a sheet pan inside to heat as you prep the flatbread.
- Toss shredded chicken with BBQ sauce until evenly coated.
- Brush flatbreads with olive oil mixed with minced garlic.
- Spread extra BBQ sauce over each flatbread, then layer shredded mozzarella evenly.
- Top with BBQ chicken and sliced red onion.
Bake
- Bake for 10–12 minutes at 425°F until the cheese is melted and the edges are golden and crispy.
- Garnish with fresh cilantro and finish with a drizzle of ranch.
Notes
For the crispiest, most charred-golden edges, preheat the sheet pan while the oven reaches 425°F. Store leftovers in the fridge up to 3 days; reheat in a 425°F oven for 3–5 minutes to re-crisp. Freezing is not recommended because the flatbread texture softens after thawing. For a lighter option, use part-skim mozzarella and reduce the ranch drizzle to keep the BBQ flavor while lowering calories.
