Ingredients

flatbread or naan
  • 4 flatbreads or naan
chicken
  • 1.5 cups cooked chicken, shredded
bbq sauce
  • 0.5 cup bbq sauce plus extra for drizzling
cheese
  • 1.5 cups mozzarella cheese, shredded
onion
  • 0.5 red onion, thinly sliced
olive oil and garlic
  • 2 tbsp olive oil
  • 1 clove garlic clove, minced
garnish and drizzle
  • 1 fresh cilantro for garnish
  • 1 ranch dressing for drizzling

Equipment

  • 1 sheet pan

Method

Prep and assemble
  1. Preheat oven to 425°F and place a sheet pan inside to heat as you prep the flatbread.
  2. Toss shredded chicken with BBQ sauce until evenly coated.
  3. Brush flatbreads with olive oil mixed with minced garlic.
  4. Spread extra BBQ sauce over each flatbread, then layer shredded mozzarella evenly.
  5. Top with BBQ chicken and sliced red onion.
Bake
  1. Bake for 10–12 minutes at 425°F until the cheese is melted and the edges are golden and crispy.
  2. Garnish with fresh cilantro and finish with a drizzle of ranch.

Notes

For the crispiest, most charred-golden edges, preheat the sheet pan while the oven reaches 425°F. Store leftovers in the fridge up to 3 days; reheat in a 425°F oven for 3–5 minutes to re-crisp. Freezing is not recommended because the flatbread texture softens after thawing. For a lighter option, use part-skim mozzarella and reduce the ranch drizzle to keep the BBQ flavor while lowering calories.
