Ingredients

Red lentils
  • 1.5 cup red lentils rinsed
  • 0.5 cup cream optional, for richness
  • 1 salt to taste
Vegetables & aromatics
  • 3 carrots diced
  • 2 stalk celery diced
  • 1 onion diced
  • 1 leek sliced (white part only)
  • 4 clove garlic minced
Soup base
  • 6 cup vegetable or chicken broth
  • 4 oz smoked ham hock or bacon optional
  • 2 tbsp butter
Spices
  • 1 tsp cumin
  • 0.5 tsp turmeric
  • 0.5 tsp black pepper
Serving
  • 1 fresh parsley for serving
  • 1 crusty bread for serving

Equipment

  • 1 Dutch oven

Method

Sauté the vegetables
  1. Melt the butter in a large pot over medium heat, then add the onion, leek, carrots, and celery. Sauté for 6-7 minutes until the vegetables soften and become fragrant.
Bloom the spices
  1. Add the garlic, cumin, turmeric, and black pepper to the pot. Cook for 2 minutes, stirring, until the spices smell toasted.
Simmer the lentils
  1. Stir in the rinsed lentils, broth, and the ham hock (if using), then bring the mixture to a boil. Once boiling, reduce heat to maintain a gentle simmer.
  2. Simmer for 30-35 minutes until the lentils are completely tender and visibly falling apart, stirring occasionally to prevent sticking.
Shred meat and blend
  1. Remove the ham hock from the soup and shred any meat. Return the shredded meat to the pot and discard the bone.
  2. Blend about half the soup in the pot until thick and textured, then stir the blended portion back into the rest.
Finish and serve
  1. Stir in the cream if using, then season with salt to taste. Keep warm for 2-3 minutes so everything is evenly heated.
  2. Serve hot with fresh parsley and crusty bread for dipping.

Notes

For the thickest texture, blend only about half the soup so you keep some tender lentil body. Refrigerate in an airtight container up to 4 days; reheat gently on the stovetop, adding a splash of broth if it thickens. Freeze up to 2 months (best without the optional cream); thaw and reheat, then stir in cream if desired. Dietary swap: omit the ham hock/bacon for a vegetarian version using vegetable broth.
