Ingredients

Acorn squash
  • 2 acorn squash Halved, seeded, and sliced into 1/2-inch rings.
Olive oil and aromatics
  • 3 tbsp olive oil
  • 2 garlic Minced.
  • 1 tsp fresh thyme leaves
  • 1 tsp fresh rosemary Chopped.
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Parmesan topping
  • 0.5 cup grated Parmesan

Equipment

  • 1 sheet pan

Method

Preheat and prep the pan
  1. Preheat oven to 400F, then line a sheet pan with parchment to prevent sticking. Visual cue: parchment should cover the pan surface in an even layer.
Season the squash
  1. Toss acorn squash rings with olive oil, garlic, fresh thyme leaves, chopped rosemary, salt, and black pepper until evenly coated. Visual cue: each ring looks glossy and speckled with herbs and seasoning.
First roast
  1. Arrange squash in a single layer and roast 20 minutes at 400F. Visual cue: edges begin to dry slightly and the squash looks just starting to soften.
Add Parmesan
  1. Flip the slices and sprinkle generously with grated Parmesan. Visual cue: Parmesan forms an even, visible layer over the surface.
Finish roasting
  1. Roast 12-15 minutes more at 400F until tender and the Parmesan is golden and crisp. Visual cue: browned, crisp Parmesan spots and fork-tender squash rings.

Notes

For the crispiest Parmesan, spread the squash into a true single layer so steam can escape. Store leftovers in the refrigerator up to 3 days; reheat on a sheet pan at 400F until hot and the topping re-crispens. Freezing is not recommended because the Parmesan texture softens. For a dairy-light swap, use a hard plant-based Parmesan style topping and keep the same roast times for browning.
