Ingredients

Cranberry sauce
  • 12 oz fresh cranberries
  • 0.75 cup brown sugar packed
  • 0.75 cup orange juice
  • 0.25 cup bourbon divided
  • 1 tbsp orange zest
  • 1 cinnamon stick
  • 1 salt pinch

Equipment

  • 1 Dutch oven

Method

Boil the base
  1. Combine brown sugar, orange juice, 2 tablespoons bourbon, cinnamon stick, and salt in a saucepan and bring to a boil over medium-high heat, 1-2 minutes until bubbling (visual cue: active rolling boil).
  2. Add cranberries and return to a boil, then reduce to a simmer (visual cue: steady small bubbles, not a full boil).
Simmer until thick
  1. Simmer the cranberries for 10-12 minutes at a gentle boil until the berries burst and the sauce thickens (visual cue: thickened, spoon-coating texture).
Finish with orange and bourbon
  1. Remove from heat and stir in the remaining bourbon and the orange zest (visual cue: zest flecks suspended through the sauce).
  2. Discard the cinnamon stick.
  3. Cool the sauce to room temperature, then chill before serving (visual cue: surface set and sauce fully cold).

Notes

Pro tip: keep the heat at a true simmer after boiling so the berries burst but the sauce doesn’t scorch. Refrigerate in a covered container up to 5 days. Freezing is not recommended because cranberry sauce texture can turn grainy after thawing. For a lighter swap, use bourbon-free orange juice plus 1–2 tsp apple cider vinegar for brightness (no alcohol).
