  • 8 oz cream cheese Cubed

  • 1 jalapeno Seeded and diced
  • 2 green onions Sliced

Equipment

Method

Prep and mix
  1. Preheat the oven to 350F, then grease a 2-quart baking dish so it’s ready for baking (visual cue: dish looks evenly coated).
  2. Melt the cream cheese and butter together until smooth, then stir in the sour cream and ranch seasoning (visual cue: mixture turns glossy and uniform).
  3. Fold in the thawed corn, 1 cup of cheddar, most of the bacon, and the diced jalapeno (visual cue: everything is evenly streaked with corn and cheese).
Bake and finish
  1. Spread the mixture into the greased dish, then top with the remaining cheddar and bacon (visual cue: cheddar forms a visible top layer).
  2. Bake for 25-30 minutes at 350F until bubbly and golden (visual cue: edges bubble and the top looks lightly browned).
  3. Sprinkle with the sliced green onions and serve (visual cue: green onions look fresh and bright on top).

Notes

For the creamiest texture, fully thaw the frozen corn and let it drain briefly if it’s watery. Refrigerate leftovers in an airtight container for up to 4 days; reheat in the oven or microwave until hot. Freezing is not recommended because the dairy can break and get grainy. For a lighter option, use reduced-fat cream cheese and sour cream—texture stays creamy, though slightly less rich.
