Ingredients

fresh cranberries
  • 12 oz fresh cranberries Use fresh berries for best burst-and-thicken texture.
sugar
  • 0.75 cup sugar
water
  • 0.75 cup water
orange juice
  • 0.25 cup orange juice Fresh or store-bought works.
dark chocolate
  • 3 oz dark chocolate (60-70%), chopped Chopped to melt smoothly.
vanilla extract
  • 1 tsp vanilla extract
salt
  • 0.0625 salt A pinch balances sweetness.
dark chocolate shavings
  • 1 dark chocolate shavings for garnish Use a microplane for thin curls.

Equipment

  • 1 cast iron skillet

Method

Simmer the cranberry base
  1. In a saucepan, bring sugar, water, and orange juice to a boil over medium-high heat, stirring until dissolved. Visual cue: bubbles should look active and rolling across the surface.
  2. Add the cranberries and simmer for 10-12 minutes, stirring occasionally, until the berries burst and the sauce thickens. Visual cue: you should see popped skins and a coating consistency on the spoon.
Melt in chocolate and season
  1. Remove the saucepan from the heat and stir in the chopped dark chocolate, vanilla extract, and salt until fully melted and glossy. Visual cue: the mixture turns smooth and shiny with no chocolate bits remaining.
Cool, chill, and garnish
  1. Cool the sauce to room temperature, then chill until set. Visual cue: it thickens and holds shape when spooned.
  2. Top with dark chocolate shavings just before serving. Visual cue: bright chocolate curls sit on top of the glossy cranberry sauce.
Serve
  1. Serve chilled cranberry sauce alongside turkey, or spoon over cheesecake or ice cream. Visual cue: the surface remains thick and glossy while the toppings contrast with the dark chocolate.

Notes

Pro tip: chopping the chocolate small helps it melt evenly off-heat, keeping the sauce glossy instead of grainy. Refrigerate in a covered container for up to 5 days. Freezing is not recommended because the texture can loosen after thawing. For a lighter option, swap half the sugar for a 1:1 sugar substitute designed for baking/cooking.
