Ingredients

Caramelized onion and filling
  • 2 tbsp butter
  • 1 large yellow onion
  • 8 oz cremini mushrooms
  • 1 small apple
  • 1 tsp fresh thyme leaves
  • 1 tbsp balsamic vinegar
  • 1 salt and pepper to taste
Phyllo and cheese topping
  • 24 mini phyllo shells use 24 shells total (from 2 boxes)
  • 1 cup shredded Gruyere
  • 1 fresh thyme for garnish

Equipment

  • 1 cast iron skillet

Method

Caramelize the onions
  1. Melt butter over medium-low heat, then add the thinly sliced yellow onion. Cook 20-25 minutes, stirring often, until deep golden and jammy.
Brown mushrooms and cook off moisture
  1. Add finely chopped cremini mushrooms and diced apple to the skillet. Cook 6-8 minutes, stirring occasionally, until the mushrooms are browned and the liquid evaporates.
Season the filling
  1. Stir in the fresh thyme leaves and balsamic vinegar. Season with salt and pepper to taste.
Bake the phyllo bites
  1. Preheat the oven to 350F, then arrange the mini phyllo shells on a baking sheet. Fill each shell with the onion mixture and top with shredded Gruyere.
  2. Bake 8-10 minutes at 350F, until the cheese is melted and the shells are crisp. Garnish with fresh thyme and serve warm.

Notes

For the best crispness, fill and bake right before serving; if prepping ahead, keep the caramelized onion-mushroom filling refrigerated up to 3 days and rewarm before filling shells. These bites do not freeze well because phyllo softens after thawing. Dietary swap: use a dairy-free shredded cheese blend in place of Gruyere for a vegetarian-friendly, dairy-reduced option.
