Method
Prep the oven and pan
- Preheat the oven to 350F. Line a baking sheet with foil and parchment.
Wrap the smokies in bacon
- Wrap each little smokie in a piece of thin-cut bacon and secure with a toothpick, using bacon cut into thirds to fit.
Coat in brown sugar and cayenne
- Mix the packed brown sugar with cayenne pepper. Roll each bacon-wrapped smokie in the mixture to coat all sides.
Bake with butter drizzle
- Arrange the coated smokies on the prepared pan. Drizzle with melted butter and sprinkle any remaining sugar over the top.
Bake until caramelized
- Bake for 30-35 minutes at 350F, until the bacon is crisp and the sugar is bubbly and caramelized.
Rest and serve
- Cool for 5 minutes so the glaze sets. Serve warm.
Notes
For the best caramelization, keep the smokies spaced on the pan so the brown sugar can bubble instead of steaming. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat at 325F until hot and the glaze loosens slightly. Freezing is not recommended because the caramelized sugar can soften too much after thawing. If you want it lower heat, reduce the cayenne to 1/8 tsp or omit it entirely.
